Begoña ended up in the world of cooking almost out of necessity. “I didn’t choose to be a chef. Life chose it for me”, she points out. Her vast experience in the kitchen doesn’t come from her family or even from tradition. In fact, when she was little, Miss Petit Suisse (as they used to call her at home because she would only eat yoghurts) didn’t even like eating. A trained industrial engineer (just a dissertation away from graduating), before donning her chef’s hat as such, she opened up two successful bakeries in Valencia at the age of eighteen before heading off to Holland. She went for a summer holiday in Amsterdam when she turned twenty, but just two months after returning, she headed back and stayed for a total of eight years. Before being a chef, she cleaned hotel rooms and gradually earned a place at her very own culinary school: the kitchens of the Amsterdam Marriott. After discovering pantries in places such as Mozambique, Thailand, United States and London, her menu started to take on its very unique fusion of flavours. Yet never losing an iota of her Valencian roots. But fate brought her back to Spain to help out her sister Ruth at the opening of what was initially her restaurant. However, Ruth never really settled in at Calle Séneca, Valencia, and the restaurant soon became La Salita, the culinary temple of Begoña. This was on 2 November 2005 and she has already notched up more than a decade of success. At La Salita, she experiments with truly local products to give them a global concept. That’s why she oversees the entire growth process of the vegetables from their planting.
